Tomato Galette

With Caramalised Shalltots and Feta

Ingredients
5/6 stalks asparagus
1 beef tomato
3 shallots
2 cloves garlic
3 handfuls spinach
Juice of half a lemon
Olive oil
Half a block plant based feta
1 sheet puff pastry
Balsamic glaze

Have you ever had or made a galette? This was my first time making a galette and I can confirm it’s very good!

Method
1. Start by cooking off your shallots and garlic in some olive oil until sticky and caramelized. Add in your spinach and lemon juice and cook until the spinach has wilted down.
2. Crumble up your feta in a bowl and then mix together with the cooked spinach and shallots.
3. Chop off the woody ends of your asparagus and peel slightly, cook in some oil until charred and season.

4. Cut your pastry round a large bowl and then fill with the feta mixture. Top with the tomatoes, asparagus and then a drizzle of balsamic glaze.
5. Add to the oven at 190C for 15 mins or until the pastry has cooked, then top with Parmesan and fresh basil, slice up and enjoy!!
