Brown Butter Udon

with “Grilled Chicken”

"Who would have thought you can mimic Chicken with Mushies"

Ingredients
1 lions mane mushroom
1 tsp garlic powder
1 tbsp smoked paprika
1 tsp onion powder
1 tsp chicken salt
1 tsp white pepper
Salt
For the udon:
2 tbsp vegan butter
1 tsp miso paste
1 onion
3 cloves garlic
2 packets of udon noodles
1 tsp chilli powder

Now we move on to a chicken breast made from lions mane mushroom! This was special! Also the brown butter and miso udon were so bloody good and so dam quick and easy!

3. Now we’re going to drizzle some oil and some salt in a skillet and get the mushroom in the pan to get used to it. Spread it round the pan to bring it up to heat. Get another pan and rest it on top of the mushroom, but don’t press.
2. Take the top pan off, move it around the pan again and repeat. Now flip the mushroom over and it should have a slight sear to it. Repeat the process on the other side. It should become a steak shape.
3. Now sprinkle the seasoning on each side of the mushroom and squirt a bit more oil into pan and sear both sides until charred.
4. Slice up the chicken breast, serve up your noodles and top the mushroom on it. Add some chopped nori and chilli oil and enjoy!

Method
1. So to start we want to add the butter to the pan. Let it melt over a medium heat for 5 mins, it should start bubbling, you need to constantly stir it and it should smell nutty and turn brown. When this happens add in the onions and garlic.
2. Now add in the miso paste and stir, cook your noodles and when cooked add them to the sauce with some of the noodle water. Toss to coat and add in the chilli powder.
