TAHINI & PEANUT BUTTER

PROTEIN BROWNIES

“This whole tray of brownies contain approx 50grams of protein in one portion.

Who doesn’t love a brownie, they never get old to me.”

Ingredients

160 g plain flour

2 heaped tbsp protein powder

Optional- 1 tsp lions mane powder

120g vegan butter

250g caster sugar

60g cocoa powder

3/4tsp fine salt

120ml plant milk

150g 80% dark chocolate

85g dark chocolate chips

For the tahini and peanut butter drizzle:

3tsp vanilla extract

1 tbsp peanut butter

2 tbsp tahini

1 tsp salt

100ml water (or more if it’s too thick)

Method:

1. Start off by sifting the flour, protein powder, mushroom powder and cocoa powder into a bowl and mix in the fine salt.

2. Bring a pan of water to the boil, add a bowl on top making sure the base of the bowl doesn’t touch the water, melt the butter with the sugar and plant milk in the bowl, turn off the heat and add the chocolate and mix.

3. Whisk together the wet mix and dry mix until fully combined. Add in the chocolate chips and combine. Then pour into a dish lined with baking paper. Heat your oven to 180C.

4. In a small bowl mix together the peanut butter, tahini vanilla extract, salt and water until the desired consistency and drizzle over the top of the chocolate mixture, use a knife to make a marble pattern.

5. Add to the oven for up to 30 mins, or until you like a stick in and not much comes out on the stick. Once cooked, let cool, the longer you leave to cool, the firmer and gooeyer they become!
