Tofu “Chicken”

Caeser Salad Sandwich

This recipe contains 21.4 grams of protein per sandwich

We all love a tofu Ceasar salad right?

I thought I’d replicate that and wack it in a sandwich

Ingredients
Half a block of smoked tofu
2 tbsp old bay seasoning (or all purpose chicken seasoning)
1 cup shiitake mushrooms
2 tbsp soy sauce
1 tbsp maple syrup
1 tbsp smoked paprika
1/2 Tbsp veg oil
Ciabatta loaf
Lettuce
Croutons

For the Ceasar dressing:
1 cup soaked cashews
2 tbsp capers
1 tbsp caper brine
Half tsp Dijon mustard
1 tbsp vegan Worcestershire sauce
1 tbsp vegan mayo
Juice of half a lemon
50 ml water (adjust to how saucey you like it)

Method:
1. Start by soaking your cashews in boiling water then slicing up your tofu into a chicken breast shape and season in your seasoning.
2. Blend the cashews with all the other Ceasar dressing ingredients until your desired consistency.
3. Now mix together the smoked paprika, oil, maple syrup and soy sauce and slice your mushrooms into little bacon chunks and get them in the marinade.

4. Heat up a griddle pan and grill your tofu breast and mushroom bacon until charred. You can also just do this in a skillet or pan.
5. Butter and toast your ciabatta and then lay some Ceasar dressing on the base with the lettuce, top with the tofu breast and the mushroom bacon and some croutons and more ceaser dressing and get stuck in.
