Pad Thai

“I could eat this every dam day”

This iconic Thai street food that I always use to scran on Koh San Road has been veganised and it was pretty dam spesh!

Ingredients
Half a block of firm tofu
1 packet pad Thai sauce (I used Wagamama)
2 large handfuls bean sprouts
Juice of 1 lime (1 for serving)
3 spring onions
2 large handfuls of peanuts
Pad Thai noodles (flat noodles)
Oil for frying
Salt and pepper to season

Method:
1. Fry off the spring onion in some oil and then crumble in the firm tofu, cook for 3/4 mins.
2. Add in the bean sprouts and cook some more until softened and then add in the pad Thai sauce and stir to combine.
3. Cook your noodles to packet instructions and then combine with the sauce, add in the peanuts and lime juice and stir some more.
4. Plate up, top with more bean sprouts, more peanuts and more lime juice and some chillis if you like it hot and enjoy!
